Pairing Food and Wine

What wine complements what food is a matter of personal taste, however there are guidelines that can help you arrive at pairings that you will like. In general we try to select wines that either complement the food or contrast with the food. In either case the wine must not overshadow the food and vice versa. Selecting food to accompany a particular wine

If you know what kind of wine you want with your meal, simply locate your wine and the guide will show you what foods pair with it. It is important to know that the most important element of a dish, from the perspective of wine selection, is the sauce.

Without Sauce: If your dish is not going to be sauced, then simply select the dish from the of list of meats and seafoods shown for the wine.

With Sauce: If your dish is going to be sauced, then your wine pairing will be based on the sauce rather tha the food itself. It may seem strange, but sauces provide the predominate flavor characteristics of most dishes and so are more critical to the wine pairing than the meat, pasta, seafood or whatever it is that is served under the sauce. Since your dish will be sauced, rather than select the food, you will select the sauce from the list provided. Selecting wine to accompany a particular dish

Will your dish will have a sauce or gravy of some kind? Somethink like a tomato sauce or a brown or white gravy or perhaps a chili spiced sauce? Note that butter, oil or natural juices (au jus) are NOT considered as a sauce for the purpose of wine selection.

Without Sauce: If your dish is not going to be sauced, then simply select the dish from the list(s) in the column at right.

With Sauce: If your dish is going to be sauced, then your wine pairing will be based on the sauce. It may seem strange, but sauces provide the predominate flavor characteristics of most dishes and so are more critical to the wine pairing than the meat, pasta, seafood or whatever it is that is served under the sauce. Since your dish will be sauced, rather than select the food, you will select the sauce from the list to determine the approriate wine for your dish.
